"When walking, walk. When eating, eat." · Zen Proverb Can you believe we are already talking turkeys?? It's been said that the older you get, the faster time goes, and we are beginning to believe it! The holiday season opens up new opportunities for us to get creative, and to share ideas with each of you. This time of year gives us the opportunity to take in and appreciate the people we love, and of course, the food we love. So, dig in! Our favorites are Barn Owl, a soft ripened, washed rind cheese that has a rich, creamy texture and nutty flavor and Seven Sisters, a hard, aged cow milk cheese that is reminiscent of an Alpine Swiss, nutty with fruity notes on the finish. The River View Tomme is a very special goat milk cheese from River View Dairy. Aged over 60 days with a natural rind, the interior paste is dense and smooth, while the flavor is mild and slightly earthy. Try pairing this cheese with apples and pears or other tart fruit. The Brebis from Highland Sheep Dairy is one of the best fresh cheeses around. This creamy, decadent, spreadable sheep milk cheese is perfect paired with beets and braised greens or just simply on toast with honey! We are bringing in new cheeses each week. Our offerings change based on availability, each unique and, let's be honest, delicious! What's HOT TURKEYS! Thanksgiving means family, friends, thanks, and.....turkey! We are taking orders for Thanksgiving birds! Organic ($5.29/lb), free range ($3.69/lb) and heritage breeds ($8.99/lb) are available. To guarantee your order, we suggest calling or stopping in by November 2. If you missed this date, we will be doing our best to process later orders, so definitely call and inquire!! CHEESE BOARDS! Did you know that we make the best cheese board in the 'Burgh? It's true. We will help you to choose a spread of cheeses that will satisfy all palates and appetites. Your order includes crusty sliced baguette, seasonal fruits and pairings, as well as a Wild Purveyors cheese board! Call or stop into the store to discuss details for your next event! MEAT CSA! That's right, one month of carnivorous goodies for you and your family!! The packages are chocked full of delicious meat options from antibiotic and hormone free, humanely raised animals. Ranging in price from $25 to $95, each package contains a delicious range of different types of meat each month. Each CSA share will include a recipe and tips on how to use the products in your share. Call or stop for details!! THANKSGIVING FIXINGS! Do you serve the same pairings with your turkey every year or do you seek out new recipes and ideas?? Whatever your method, we have a great variety of fixings for your bird! Mushrooms are a great addition to your stuffing (see recipe to right), pureed into a risotto or transformed into a delightful vegetarian gravy! We have a huge variety of potatoes, perfect mashing, roasting, stuffing or smashing. Braising greens are a perfect addition to a souffle, or on their own with some olive oil, pine nuts and shredded cheese. The possibilities with winter squash are truly endless, and we have a beautiful array of these in stock. (These guys look great as part of a table centerpiece until you are ready to eat them, too!) Beets are lovely roasted with other root veggies or tossed into a salad with goat cheese, walnuts and a light vinaigrette. And, don't forget the cheese! We had the opportunity to spend time with students at the Student Sustainability 'Show and Tell' at Carnegie Mellon, where student groups displayed and discussed the Environmental and Sustainable projects they have been working on. We were also lucky enough to attend a lecture by Melinda Hemmelgarn on food and the media, which explored the factors that affect our good food choices and food literacy. After the talk - we all ate more Wild Purveyors Cheese!! We were also thrilled to share our knowledge and passion with local University students at Pitt through tasting, talking and sharing ideas at the William Pitt Union! A big thanks to all of the students we spoke to--keep your ideas coming!! Make Maitake Mushroom Stuffing! Maitake mushrooms, roughty translated for "dancing mushroom," are loaded with health benefits. Known for their immunity boosting and cancer fighting propertiies, these delicious edible fungi are low in calories and high in fiber. Awesome. The Goods: 1 teaspoon dried rosemary 1 teaspoon dried thyme 1 garlic clove, minced Salt and pepper to taste 4 Cornish hens, rinsed and dried 1 tablespoon butter 1 tablespoon extra-virgin olive oil ½ cup diced onion 1 rib celery, diced 3 cups sliced, cooked maitake mushrooms, chopped 1 egg, beaten 1 tablespoon apple jam ½ cup stock (veggie, chicken or beef!) 1 cup cubed dry bread (made from day-old or toasted bread, or substitute ½ cup crushed bread cubes) The Drill: Preheat oven to 350 degrees. In large skillet or saucepan, heat butter and oil. Add onion, celery, garlic and mushrooms and sauté until soft, 3 to 5 minutes. Add herbs Remove from heat and add egg, jam, broth and cubed bread and mix well. Transfer directly to a greased baking dish, covered, approx 20-25 minutes. Remove lid, and bake an additional 10-15 minutes, or until brown. Serve immediately.
