Dear neighbors, For a Limited time we are selling quarter shares of American Guinea Hog if we can put four folks together for the purchase. I will be doing all the organizing and cut sheets. American Guinea Hogs are a small lard type hog that was traditionally kept throughout the southern U.S. With the advent of commercial hog farming the AGH fell out of fashion. They are a small hog, topping out at 250-300 lbs. They have a easy temperament and are excellent mothers. They subsist primarily on grass and hay with a small amount of grain daily and vegetable and garden scraps. The resulting meat is well marbled with a succulent fat cap. It is definitely not the other "white meat" but rather has a rich taste akin to steak. As a result of living out of doors, their meat is rich in vitamin D and omega 3 fatty acids. We do not purchase organic feed but the bulk of their diet is grass from our pasture. We do not spray any herbicides or pesticides the field and we use rotational grazing methods to increase fertility. *There are four possible shares; two front quarter shares and two hind quarter shares. The front quarter share includes bacon, ground pork or sausage, chops, a hock and what is known as the Boston butt and picnic ham. The hind quarter is is similar with bacon, ground pork or sausage, chops, a hock and (here's where the difference is) what is known as the ham. *There is some flexibility in how these are prepared. The hanging weight of a quarter of the hog in question will come out to be about 45lbs (ish) at $6.50 a lb plus the butcher and wrapping fees that come to between some where around $25-$35 (depending on how much you want cured). The take home volume after trimming and deboning will be in the neighborhood of 30-35lbs of meat.
